Foodie Friday – No Pastry Quiche

This weeks Foodie Friday is all about no pastry quiche.

I like having lots of left overs in my fridge, it makes it super simple to rustle up a great meal without having to put in loads of effort. No pastry quiche is one of my fridge staples, but I’ve been playing with the recipe and now made it an even easier version than I have done in the past.

I give you my Quinoa Quiche.

Foodie Friday - No Pastry Quiche

The great thing about this recipe is that you can use the salad left overs from the same day, meaning you can stretch this out further, reducing the amount of stuff you need to chop or create everything from scratch. Nothing is off limits – make the recipes work for you, simplify life whilst nourishing yourself at the same time.

Prep time :: 10 mins    Cook time :: 45 minutes (depending on oven)    Serves :: 8

Ingredients ::

  • 1 tbsp of coconut oil
  • 1 small onion chopped as finely as possible
  • 1 small carrot cut into small cubes of grated
  • 1 red pepper chopped as finely as possible
  • 2 cups of broccoli – chop the stems really small, and break down the florets
  • 10 eggs beaten together
  • 1.5 cups of unsweetened almond milk
  • 2 tbsp of finely chopped fresh thyme
  • 1/2 teaspoon of salt
  • pinch of black pepper (I do throw more in because I like the kick, so don’t be afraid to dabble with your flavourings)
  • 1/4 cup of really well rinsed quinoa

Directions ::

  1. Pre-heat oven to gas mark 4
  2. In a medium pan add coconut oil and melt on a medium heat
  3. Sauté vegetables until tender and the onion starts to brown, remove from heat for a few min when done
  4. In a large bowl mix together your cooked veggies with all the remaining ingredients. Make sure at this point you have rinsed your uncooked quinoa well before you add to your mixture.
  5. Lightly oil a 9 x 13in baking dish (I don’t have one large enough so I use my two smaller quiche dishes.)
  6. Pour in the mixture. Place in oven for 40-45 mins or until the eggs are set.
  7. Allow to cool for 5 mins before serving

The quinoa will cook whilst in the mixture in the oven, giving your quiche that extra firmness. Store in airtight container. This is a great lunch box add too.
