Foodie Friday – Cashew Cream
I like dairy, but dairy doesn’t really like me. So, I needed to find an alternative cream cheesy tasting spread to help me get me cheesy fix, and my cashew cream does exactly that.
Serves :: 6/8 servings Prep time :: 10 minutes plus overnight soak Cook time :: 0 minutes
Ingredients ::
- 2 cups of raw cashews, soaked for a few hours or overnight to soften
- ½ cup of water
- 2 tbsp of lemon juice
- 1 tbsp of nutritional yeast
- 1 tbsp of onion powder
- 1 ½ tbsp. finely chopped chives
- ¼ cup finely chopped parsley
- 1½ tbsp. finely chopped shallots or red onion
- ½ tsp seas salt
- Freshly ground black pepper to taste
Directions ::
- Blend the soaked cashews with water, lemon juice in high speed blender, until smooth.
- Pause, scrape the sides down of blender & fold ingredients to make sure creamy texture.
- Transfer mixture to bowl and add nutritional yeast, onion powder, chives, parsley, shallots, salt and pepper, mixing thoroughly – and you are ready to serve
Use this as a great addition to your no bread wraps. Or as a dip to enjoy with your kale chips
