Foodie Friday – Cashew Cream

I like dairy, but dairy doesn’t really like me. So, I needed to find an alternative cream cheesy tasting spread to help me get me cheesy fix, and my cashew cream does exactly that.

Cashew Cream

Serves :: 6/8 servings     Prep time :: 10 minutes plus overnight soak     Cook time :: 0 minutes

Ingredients ::

  • 2 cups of raw cashews, soaked for a few hours or overnight to soften
  • ½ cup of water
  • 2 tbsp of lemon juice
  • 1 tbsp of nutritional yeast
  • 1 tbsp of onion powder
  • 1 ½ tbsp. finely chopped chives
  • ¼ cup finely chopped parsley
  • 1½ tbsp. finely chopped shallots or red onion
  • ½ tsp seas salt
  • Freshly ground black pepper to taste
Directions ::
  1. Blend the soaked cashews with water, lemon juice in high speed blender, until smooth.
  2. Pause, scrape the sides down of blender & fold ingredients to make sure creamy texture.
  3. Transfer mixture to bowl and add nutritional yeast, onion powder, chives, parsley, shallots, salt and pepper, mixing thoroughly – and you are ready to serve
Use this as a great addition to your no bread wraps. Or as a dip to enjoy with your kale chips
