Foodie Friday – Gluten Free Pancakes with Blueberries

This is my all time favourite breakfast – Gluten Free Pancakes with Blueberries.

Gluten Free Pancakes and Blueberries
I cook up a batch of these gluten free pancakes and store in airtight container so I’ve got an easy go-to, nutritious breakfasts all ready.

Preparation :: 5 Mins    Cooking time :: 5 Mins

Ingredients ::

  • 100 g rolled oats
  • 200 g fat-free cottage cheese
  • eggs
  • 1 teaspoon cinnamon
  • 1 handful blueberries

Directions ::

  1. Blend the ingredients in a food processor.
  2. Pour a ladleful of the mixture into a heated pan and cook for 2-3 minutes on each side.
  3. Serve with the blueberries.

You will have a batch of 10 to 12 pancakes depending on the size of your pancakes.
