Yes, I did say Broccoli can be exciting!
This Foodie Friday, I think it’s time we added in this simple little side dish, packing in some good honest broccoli and most importantly, making it taste great.
Prep Time :: 5 minutes Cooking Time :: 10 minutes Serves :: 4 serving
Ingredients ::
- 1 bunch broccoli
- 1/2 cup grated carrot
- 1/4 cup toasted sesame seeds
- 1 tablespoon olive oil
- Sea salt and freshly ground black pepper
Directions ::
- Wash broccoli, cut off and peel the outside of the stalk, slice into pieces and put aside.
- Cut the florets into bite-size pieces.
- Warm oil in a pan, add stalk pieces and sauté for a few minutes.
- Add broccoli florets, then sauté for about 2 minutes.
- Add 3 tablespoons of water and grated carrots. Cover and allow to steam for about 3-4 minutes
- Remove from heat and add toasted sesame seeds, sea salt and black pepper.
- Serve.
Super simple, and quick to make. As always, I recommend making up a batch for dinner and toss in your salad for lunch the following day.
